I use a convection oven (its a large glass bowl with a heating element in the top....its brilliant for roasting/warming up. I put a skewer through the middle, In foil for around 1hr at 175" . Often rub the spud in salty butter or olive oil.

Most of the year can get great potatoes from local markets. like most things they can be found.if prepared to look around .
