Talking to a guy who lives in Pattaya and is here for 2 weeks as he is considering moving here.

Frozen fish must be defrosted slowly. Ideally take from freezer and place in t fridge overnight, then out of the fridge for several hours.
The worst way to do it is--Freezer to Microwave.
