Did the tiler say what adhesive they would use? According to my tiler in Australia it should be a rubber based adhesive. All my floors in Hua Hin house have started to pop so will need to be retiled at some time. Bit difficult to organise on holiday trips.
Good thinking about the material. Though if I remember correctly during a tiling course I did in Australia, the adhesive used will depend our your situation. Rubber based adhesive was for tiles in a area of high traffic, vibration (near building site), earthquake prone area etc.
I'd say a fair price also depends on how large your job is. If you are laying 4 m2 then the price is going to be higher than if you were laying 40m2. A 4m2 job may be completed in half a day but you may have to pay for 2 workers, there may be a lot of cuts involved so I wouldn't get too fixated on the price per m2.

I can understand that. We have 14m2 in the bathroom, pretty heavy stone type tiles. We will give the guy a try. He did a great job at our friends house as the finish looked perfect so hopefully he can do the same by us.
