Bugger you lot sending out psychic vibes and disrupting my laid back life.
Without a word spoken about mincers my good lady suddenly wanted me to buy the ingredients and today i am slaving away on my Moulinex electric mincer like demon. :D :D :D :D :D

What are making Sarge, sausage?


If so, what casings are you using? I use the ones which I've mentioned earlier but they always seem to burst when cooking, even when the sausage isn't over stuffed. These are collagen casings rather than intestine casings which only seem to be available in packs that are big enough to supply the whole of South East Asia with sausage. :shock: :D

Mother in law is in charge and we are using pigs intestine (i have always used it)to make sigh goh Issaan Her Recipe.

I am still hunting the house to find the numerous recipes that Dunc of Duncs pies fame gave me many years ago

I've tried both and there is no doubt (in my mind) that the real pigs intestines are much better. It's true that the packs do come about a mile long, but you can divide them into reasonable lengths and then freeze in individual bags and just take them out one at a time when you need them. I've done this and had no problems with the skins bursting. :cheers:

Okey dokey then
12 foot of sausage now cased wife mother and sister in law now tying them into sort of balls :shock: :shock:
Having four sausages on the end of each hand not a job for me. :D :D :D
Ingredients
Lean pork about a kilo
Boiled skin half a kilo ish
Pork fat about quarter kilo ish
Boiled rice about a kilo
garlic about a quarter kilo ish
pepper
mono sodium
salt
and some crystals forget the name

Mince skin pork garlic and fat through small holes on mincer

go for a fag and a cuppa come back when the putchagahn calls and then whack the concoction into the skins

easy innit :shock: :shock: :wink: :wink:
i will try and get more accurate weights next time but er indoors she who must be obeyed was on a mission :roll: :roll: :roll:

Just for anyones interest my mincer is a moulinex hv3
if you search moulinex hv3 mincer it comes up and has all the photos
it minces grates cheese and lots of gadgets mine is 15 years old and still going strong
i dont know if moulinex has an outlet here in thailand but i would be surprised if they did not

I am going to makro pranburi later this morning and will have a look while i am there
