You can do this for a fee of I think 1800 baht at the immagration office. Mail in your passport to a local thai embassy or consulate in your home country. Get a 60 tourist visa for free. Saves you money and time dealing with the immagration office.
From what I've read on HHAD, the fee is actually 1900 Baht, and you must do it with at least 21 days remaining on your visa exempt stamp. However, I'm not 100% sure, and I'm sure somebody will correct me if I'm wrong.

In the UK Hull consulate are very obliging.
I have been a couple of days over on a 60 day.
At the airport it wasn't a problem.
I apologised and asked if this may prevent my return to LOS.
NO fine. No problem.
Should the lokal bill have noticed it.

It has been reported on here that you can get a 7 day extension for 1,900 THB. You'd be best going with your return ticket as well just to show that you intend to leave during the 7 day extension.
I think you should be able to apply at any time during your 30 days. I'm sure the 21 days that Big Boy mentioned only applies if you want to upgrade your visa exempt stamp to a Non O visa. If you apply say 7 days before your 30 day stamp expires, you won't lose any time. The 7 day extension will commence when the 30 days runs out.
As others have said, you'd be better off with a tourist visa. You can apply by post to Hull and it's free until March 2010. Note, Hull will charge a handling fee and you need to pre-pay for return post. http://www.thaiconsul-uk.com/ Edit Applying to Hull assumes your a Brit. Whatever nationality, still get a tourist visa.
As said above, if you are from the UK, most consulates there are charging handling fees for the free 60 day tourist visa. I did read somewhere that the Liverpool consulate was one of the few not charging. But you'd have to check:

You will not be arriving arriving on a 30 days tourist visa (there is no such visa) but on 30 days visa exempt. These 30 days permission to stay can at any time be extended by 7 days at the immigration for a fee of 1,900 baht.
You will not loose and days by applying early but you must show a ticket out of Thailand.

Make sure you get the new address for the 'Hull' consul - as it isn't actually in Hull anymore, but in Hessle on the outskirts.

Used Hull 3 times. Last time a week later never got my passport back.
E mailed the embassy. I was assured they had sent it. And was advised to check with Royal mail. And sure enough. I was out when the passport should have arrived but the postie, bless him/her didn't put a card through the door.
It was a few hours from it being returned to sender.
