Does the Embassy web site give any info? Must admit that I havn't looked at it for a passport reason.
Failing that, you could email the consular section. In the past I've found their response time very good - within 24 hours.
I know your passport is in HK/UK but The Emb should be able to give you an idea of timing/who to contact in HK etc.

I don't think you can track the actual application at the HK embassy, think I can remember reading something about it on the FCO website, not 100% sure though. Should be able to track the postal service like you mention but with the application I think you can assume all is OK if you don't get any emails from anyone at the FCO....no news is good news so to speak.
