Pete, I'm not really a cheese lover as such, so I can't contribute much to this thread. I am a cheddar cheese addict though, so I find the processed cheese they use on burgers and etc to be very tasteless. I usually refer to it as being plastic rubbish.
For those who live here in Hua-Hin and who like Italian type cheese, try the cheese factory in Borfai. Unfortunately they don't make cheddar cheese

, but I've been told their prices are a lot better that Villa Market and etc. All the cheese they sell is made on the premises, apart from some very tasteless cheddar which they sell on behalf of a place in Chaing Mai.
I also used to enjoy a type of cheese in South Africa which we called "green cheese" or "stink cheese" but have never seen it anywhere on my travels. It used to come in a sort of cone shape, and had to be grated since it was very hard and brittle. Really good on warm toast with lots of butter. If anyone knows what it's called, and where it can be found, I'd love to know.
