I know it's not Hua Hin but if you are around the Rama 2 area, coming to and fro from Hua Hin, this guy does some great stuff. At reasonable prices too.

In Hua Hin I always use Hua Hin Ham and Bacon.

I see there are a few comments about sausages being frozen. They are not frozen when they're made, so I'd be interestef to hear how many have asked the proprieter for fresh i.e. arrange to buy them on the day of manufacture.

I like my sausages fresh, not frozen - just like my women! However, when it comes to beer, just short of ice is nice!!

So have you asked the local manufacturers if they can supply fresh? They have to be fresh before they are frozen.

Naab Thong will provide fresh or frozen sausages - you just have to ask!

Not sure I get the frozen v fresh thing? I have a great butchers in my village here in the UK - special late opening tonight in the whole village, so I ordered my Turkey, gammon and all the trimmings whilst enjoying a bit of wine, a pasty and a mince pie - anyway back to the sausages and being a sausage nut and because I commute to work, I normally only get to the butchers on a Saturday, so I stock up.......and stick the excess in the freezer! Doesn't affect the texture or the taste and I eat them as I want rather than having to need to.

Anyway, whilst there, I just had to buy half a dozen of the speciality sausage I saw tonight - venison, partridge and pheasant with red wine and thyme. Hmmm, think I might have a couple for brekky! :thumb:

As an aside, I thought HHH&B's Lincolnshire sausage excellent.

You're right Caller IMO - nothing wrong with freezing sausages, gammon etc etc. The only thing I make sure of is to defrost fully, and mop up excess moisture from defrosted meat with kitchen roll.
Meats bought already frozen can be treated differently and with the mnces can be cooked from frozen. Commercial freezing is obviously faster and controlled better than home freezing, so it's OK to cook it and then re-freeze. With home frozen meats it's not recommended to re-freeze.

Sorry I have not posted much yet as I am in the process of moving from Phuket so do not know much about things up there.
If anyone misses British style Indian Curries I am moving my bussiness and will be looking into advertising on the forum in the near future.
I have been a chef for 30 years and have worked in Curry houses back in the UK and I have been making curries here on Phuket for the last 5 years.

Do you mind telling us why you are leaving Phuket after 5 years and moving to HH?
