Trifle Spnges/Maderia Cake

My final festive request (I think). In my household, the main feature of Christmas Tea is a ginormous Sherry Trifle. This is always my job to make, and Christmas wouldn't be the same if I didn't.

Ideally, I would like to locate somewhere selling trifle sponges. Failing that, a large slab of maderia cake or something similar would suffice. There must however be no coconut content. My body immediately rejects any coconut product, and it would probably be quite a pretty sight when mixed with the other trifle ingredients. However, I don't really want to go down that road.

Can somebody please advise where I can buy either or both?

If you're feeling especially adventurous, you could make a Victoria sponge in advance and cut it up into fingers? That way you'd be sure of no coconut or coconut oil.

Very simple:

4 oz caster sugar
4 oz cooking margarine or butter
4 oz self-raising flour
1 tsp baking powder
4 eggs
2 tbsp milk

Blend sugar and marg/butter, add beaten eggs with milk, add flour & baking powder. Pour into a wide flat tray and stick it in the oven at 180 C for 20 minutes or until a skewer comes out of the cake with no mixture on.

If you make it a few days before you're planning the trifle, the sponge will dry a little and should make perfect sponge fingers!

There's a large cake and ingredient shop just past Somtawin School on Petchkasem Road (same side) before you get to The Hai Piang Restaurant on Soi 64. Literally 50 yds up from the school.
Not sure if it'll have what you want but they've got loads of stuff in there.

Thanks JJB, I'm not sure that I'd be allowed in the kitchen twice in one year. If all else fails though, I might have to give it a try.

It's always a head scratcher for me with allergies like BB's. Will the shop clerk really know what's in a certain cake, or just give the answer the buyer wants to hear to get a sale?

Terrible when my faith in mankind has sunken that low but.....we have a friend with a son who is allergic to everything. His Thai Mom constantly gets bad info about what's in or not in certain products/dishes. She really has to be careful as peanut products can kill him, and chocolate make him very sick. Poor lad, with a very stressed out Mom. :( Pete :cheers:

I make a Trifle now and again and always just buy the cake, usually from BigC, which you do not have in Hua Hin. I also make an Australian specialty called a "Lamington", which I also buy the cake off the shelf. The last time I did them I bought some cakes from Makro in Hua Hin, but how you tell that there is no coconut in them I don`t know.

It will not matter much for a Trifle, but one of the cakes that makes good Lamingtons is pre- cut diagonally, which cause a lot of waste, as I want them square. Why they cut them like that completely eludes me. :?

As Lomu as written, there are several other cake shops around as well, so I guess it is just a matter of asking. You may have to order one as they INSIST on plastering all types of cakes with "crem". :cheers:

Villa market has sponge/lady fingers -Italian brand I think.Were on top of the freezer behind the eggs last time I bought them.

Trifle? Now your talking :) I am sure you can find any little plain cakes in Tesco extra, they are better if a little stale IMO.

English Trifle
1 pound cake cut into chunks
1 recipe vanilla custard pudding
1 jar raspberry jam
2 cups whipped cream
1 pint fresh raspberries
Gran Marnier or sherry

Place a Layer of pound cake in the bottom of a glass serving bowl. Sprinkle lightly with Gran Marnier or sherry. Top with a layer of raspberry jam to coat. Then add layer of custard. Repeat ending with custard and then top with whipped cream and fresh berries.
You can put toasted almonds on top, but if you can't eat them no harm in leaving them out.

Actually, because of my problem, my wife often asks that question, and the answer so far has always been honest and correct. Believe me, it would only take one bite (I wouldn't have chance to swallow) - anything on the way down would be met by the contents of my stomach on the way up ( :oops: sorry, probably too much information :oops: ).

The last episode that caught me out was at Bristol Harbour Regetta last year. Sample sized drinks of orange juice etc were being handed out free in quite a few places. It was a hot day, so was very welcome. Then I unwittingly took a sample of Malibu - it literally touched my bottom lip, and I was urging violently. Fortunately my wife had a bottle of water with her, and we able to wash it off my lips before the inevitable happened.

Ladyfingers originated in the late 15th century at the court of the Duchy of Savoy, and were created to mark the occasion of a visit of the King of France.
I am fairly sure no coconut, but check if it has coconut flour? The ingredients should be on the packet somewhere. They are also good for tirimisu 8)

If you do not have any luck with all of the other suggestions I would suggest that you speak to Barry at Miss Nongs Pies in Koa Takiab.They are not far past Cicada Market on the right heading in towards Koa Takiab. They will bake you any kind of cake that you need and you can tell them of any allergies you have, so will give you piece of mind that there are no unwanted surprises.

Ratafia biscuits maybe? They are a traditional for Brit trifles anyway and probably the easiest way to go for BB.

And BTW BB - I do hope you can manage all this festive fare you are looking forward to! Give it another year and you'll be down the local noodle stall for a festive phad thai. :wink:

The Italians aren't especially renowned for their love of coconut and these might be a good option. Being Italian, they'll be as dry and hard as house bricks so will certainly do a good job of soaking-up all the booze!
