No, I'll create a new thread called Meat Curing - it might look a little strange, with references to cheese making, but it'll be the best I can do.

What about goat's cheese? I have just read..."It's almost as easy as making a pot of tea"

When I was in France I used buy this delicious cheese from local markets. Sometimes they would have a dusting of chive over it...yum!
You can also make wonderful cheesecake from it too.

Have a look on youtube just type in making goats cheese. You can make it also without rennet.
I think gots cheese (Chèvre) and Feta are very similar.

It's just a case of if you can get the milk :)
