Coincidentally, I've just noticed that on page one of the Feeding Time section, this thread seems to be in forth place as far as replies/responses are concerned. Two of the others have been about venues, so if we exclude those, it's clear that beer and eggs are extremely important to most of us. Perhaps JW can arrange a "beer and eggs" quiz night. :lach: Might be time for beer poached eggs......update to follow. :wink: :laugh:

If you prick the yolk does it then turn out hard? I always thought the benefit of a poached egg was the runny yolk!!

You can also buy them at HomePro. But they are selling them for 69 baht. We were robbed. Buggerbuggerbugger. :laugh:

Probably by now all of those of you craving good poached eggs have bought a poacher (or got your own chickens), but on my recent UK trip my son had a novel way for poaching eggs. Tear off a piece of cling film about 12"/30cm long, place it in a small bowl, add a little bit of oil then crack your egg into it. Twist the top to form a closure and then place into boiling water for 3.1/2 to 4 minutes and they come out perfect, albeit a little crinkly looking.

DB.........I think Jamie Oliver or one of those celebrity chefs gave a demonstration of this method. I did try try it but just too much hassle, and I also don't really like the idea of boiling the cling wrap with my egg in it.


Anyway, the microwave poacher works fine and we've already used it scores of times, although I must admit that I still prefer frying my eggs is a bit of butter. Very tasty, and you can get them just the way you want them.


How often to get double yolk eggs from your chickens? We haven't had any that I know of, but a couple of weeks ago one of the hen laid the biggest egg I have ever seen in my life. It was seriously big. The first thing I thought when I saw it was, "that must have hurt" :laugh:

Anyway, right now we are getting loads of eggs so the hens must be happy again.. :thumb:

I can understand your concern about boiling the eggs in plastic and for those of us fortunate to have our own chickens it isn't necessary. I've only had one double yolk egg in about 7 months and it was about half as big again as an ordinary egg - I don't weigh them on a regular basis but this one was I think 92 gm compared to an average of 60-65 gm. :cheers:

We don't have a scale so I've never weighed any of the eggs, but I'm amazed at just how much diet can affect egg production with layers.

With our regular Thai "gai baan" we'll get the same size and same quantity of eggs whether we feed them or not. With the layers on the other hand, diet determines how many eggs we get. Apparently, if we feed them only proper chicken feed, we should be getting between 40 to 50 eggs per day from 50 hens. Since we mix their diet with cracked corn and quite a lot of greens, we only average around 25 to 30 eggs per day. It seems, according to the research I've done, that protein is the important thing so if you don't fancy using commercial chicken feed, you need to supply an alternative source of protein............meat or fish, although fish apparently alters the taste of the eggs.



Anyway, my MIL must be doing something right because so far we haven't had any complaints about her eggs. Personally I think many of the eggs were on the small side before, but things seem to have evened out, and most are now a good size.


I still love the idea of getting and eating eggs which are only a day or two old, compared to supermarket eggs which are weeks old. The only downside is, I'm not sure if I'll eat store bought eggs again, thanks to the internet and "freedom of information". I guess sometimes ignorance really is bliss. :shock:

My daughter's chicken condo in California. What you can't see is the ramp going up to the enclosed area where the nests are...egg laying zone. That coop is big enough for 6 chickens. They get locked in at night due to raccoon attacks. Pete :cheers:
