Everyone has a favourite, let's see what it is. I know that a stock answer is " Well, it depends where I am and what I feel like...". All well and good but I think everyone has a favourite that transcends everything else.
For me, it's Italian far and away. Any region, any type. I enjoy it all! Please elaborate if you choose one of the general categories above. Pete

If I had to pick probably Italian, although Cajun/Creole may tie it.
As you said it depends on my feelings, and variety is the spice of life so even Italian would get tiring after too many days.
It is hard to leave California with the variety we get here, every one on your list is available within a 20 minute drive! But probably best for the waist line if it wasn't so available

60 is the right age indeed, because young French women nowadays seem to be only able to use a microwave... and ready made frozen food... (I am French, alas !)

I'm with Migrant on this. Italian is my favorite, with cajun/creole, Mexican, and Japanese (mainly sushi) being in a three way tie for second.
The good news Migrant (for your move here) is that there are probably more Italian restaurants here that any other western food type. You can get every type listed in Thailand and all but two or three in Hua Hin... great cajun/creole in Bangkok at Bourbon Street.
My brain is like an Internet browser; 12 tabs are open and 5 of them are not responding, there's a GIF playing in an endless loop,... and where is that annoying music coming from?

In my opinion the best food in the world comes from Australia. I have lived all over the place and visited many countries. We lived for 10 years in Australia and had the best food ever there. The seafood is amazing! There is a lot of immigrants who have restaurants, Italians, French etc.
Italian is great, one of my favourites.
I also love Greek food, middle eastern food.
I really love French food, but sometimes it can be "hit and miss" over there
As for UK food ....I have been served some amazing Dover Sole during my lifetime. UK food is improving, but not anywhere near the top table yet.
I love Asian food but it comes way down the list, preferring Indian & Chinese to Thai.

I would actually put modern English / British near the top of my list. There are some fantastic places over here now serving fantastic food. Even my local pub serves up some great local fare (it's won a few awards and is up for another next month).
But like others, I can't really specify one cuisine as there are just so many I enjoy and have had great meals from.
But unusually, I can rule out Italian (bar pizza) and French. The Italian is as a consequence of London once having been full of crap Italian restaurants with too many bad memories plus the fact pasta never excites me. French as its generally too creamy and I am allergic to egg and separately, too much dairy produce!

I do agree Caller that UK food has improved no end As you say some of the pubs are turning out great food. I cannot stand a restaurant that is too starchy. serving very small portions that have been turned into microscopic works of art
Re: Italian food, I like some pasta, mainly fish pasta, the Italians also cook great non pasta dishes.

agreed that Australia dishes up the best range of international and asian fusion styles with the very best products available. It's shortcoming is that it is quite expensive, but gourmet heaven nevertheless
