Non-Retirement Visa Options for 4 month stay

Like many others, I'm getting completely swamped with the visa options for my planned 4 month stay in Hua Hin from October this year. I'm appealing to you good people to help me see through the various options.

My wife and I are 42, and we're looking to rent a property and we're planning to do a bit of travelling outside Thailand in the period.

I think my best option is a multiple entry visa. Am I right in thinking I can get a Tourist visa that covers me for two 60 day periods, provided I leave and re-enter before the expiry of the first 60 day term?

I'm intending to apply in advance at the Thai embassy in London. Does anybody have any experience of this, and do you know how far in advance I can apply?

Correct re the above and don't forget that you can extend each 60 day entry by a further 30 at Imm here for 1,900 THB.
If you leave the country (other than to activate the second entry), you must get a re-entry permit from Imm or your permitted to stay date will be lost. Easy to do and costs are 1,000 THB single and 3.800 THB multiple.
