I think that the Marriott is 1Km from the bars and Hilton is right across the street?
Any thoughts on which would be the best. A nice 1k evening strool to the hunting zone is fine with me!

My feelings on the big name hotels:
Hyatt Regency
Pros: Modern, large grounds, privacy, plenty of greenery
Cons: Distance from downtown
Hilton
Pros: Prime location, balconies looking over the ocean, home to the Hua Hin brewery!
Cons: Bit crowded, too much concrete.
Sofitel
Pros: Great location, vast grounds, Colonial style, superb meat pies by the pool!
Cons: A bit formal, lacks atmosphere
Marriott
Pros: Lively Acapulco feel, cheaper than the above three, deep pool
Cons: Small rooms (Holiday Inn style), too crowded
My preference is for the Hyatt or Hilton.
Most big name hotels are not in the habit of pissing off their guests and as long as you're discreet, they should all be guest friendly.

I stayed at the Anantara last year as well as the Marriott and while I didn't try to take a guest back to the Anantara (just didn't consider it being THAT sort of place!) I did take a lovely lady back to the Marriott.
No problem getting in and no awkward looks or glances from staff as we left next day.
This year, however, I think I'll give the Hilton a shot as i always like to stumble out into the action and the reviews here are positive

I stayed at the Hilton last year, and will be staying there again this year.
While VERY expensive in Thai standards, still cheap compared to Honolulu. I'm a business traveler and stay at Hilton hotels all over. The Hilton Hua Hin is by FAR the nicest of any I've ever stayed. The Hilton Hawaiian Village is my favorite of all Waikiki hotels, and the Paris Las Vegas is terrific as well. But the Hilton Hua Hin puts both of those to shame. Hardwood floors, nice lanais, great pool w/chaise lounges and umbrellas and swim up bar/food. While several of the restaurants there were good, the food at the brewery was poor. Make sure you get your CIPRO and get out and take in the local food. I enjoyed the food at the night market and on the piers. Far better and cheaper than at the hotel. You can get a whole steamed fish with shoyu, ginger etc. for about $3 (which is probably still expensive in thai standards.
The Hilton is guest friendly and is directly across from the girly bar area. It is also directly across from a couple of legit massage places. I think a 1hr full body thai massage was about 300 baht = approx $7.50 compared to about $60 at the hotel spa.

Only 2 drawbacks for the Hilton. First, it has almost no grounds and a shite pool. Second, even if you wanted to lounge by the pool, you have to get up up before dawn as it is overrun (though run is the wrong word) with corpulent Germans in white bath robes. This is a xenophobic, English perspective of course and if you are a corpulent German with insonmia, then the Hilton is heaven. Otherwise, great rooms, great views, fantastic staff, ideal location for town. Take your pick.
