Does anyone know, why is it you only get imported lamb here? Why is mutton never available, especially now that there are more Indians living here. Lamb is fantastic, but it just isn't mutton, and mutton curry is mutton curry.

Try to get a Thai to eat lamb. Success rate is probably about 5% at most. They had some very good chops at the Christmas Eve buffet we went to. Convinced the wife to take a bite and she really suffered through the chewing and swallowing. Little daughter almost ran in horror as she goes to a petting farm filled with lambs about every weekend over here. She'll come around....maybe.
If it's that hard for them with sweet, tender lamb, mutton is probably out of the question regardless of any Indian population spike. Pete

What I did was talk to the local Thai pork seller at the local market. I then bough half a pig from him for 4000 baht which was about 55 kgs. I then downloaded a video from YouTube on how to butcher a pig and then just followed the vid. I got myself a freezer full of all the cuts you don't get here like chops and hams etc. I have some bacon and hams in brine now waiting for the cut.
The next project is to build myself a smoker.
We also have a farang food company here that makes sausages etc. I can mix up my own recipes for sausages and he will case them for me for the price of the casings and I just give the girls a tip.

Wild Boar, or at least the equivalent is easily obtained. Ask for "Moo Baa" which roughly translates as "Jungle Pig" Like the sound of this one for Sunday lunch.

Takiap. There has been a guy on the fresh market in Huahin who has been selling pork chops(on the bone) for years.

HHF......i'm sure the wild boar meat would make great sausage, and maybe even the crocodile, but ostrich sausage is nothing special. I think it's just too lean for sausage, so one would have to add in some fat. I also can't see many people enjoying ostrich steak unless they like venison, since the two are quite similar. It does make good biltong though, especially if you like your biltong very dry. Like I said, it was the cheapest meat you could buy in South Africa, so many South African tended to stay away from it, believing it was inferior. To the contrary, I've heard it's better for you than beef or lamb since there's no fat.
