On a different note: I tried my hand at making Northern Thai Sausage yesterday using collagen casings and an ordinary plastic funnel. Really easy to do and a lot quicker than I would have thought. The great thing is, my 8 year old daughter got the hang of it within a few seconds.....lol.
Well, I guess I'll head down to Makro in a few minutes for some salted casing and other supplies, and then look forward to eating good home made sausage for the next week or two until the novelty wears off.

PS: I was getting mixed up between Isaan Sausage and Northern Sausage. I enjoy both, but would choose the latter any day.
