I’ve been told that it’s much healthier when combined with pineapple juice, Bacardi and crushed ice, and served in a large glass garnished with a slice of pineapple and a cherry; well it certainly tastes better anyway!

Do not eat stuff with coconut milk or cream in, Sarge; saturated fat is just what you're trying to avoid.

OK, found 2 Thai cooking websites so far & have been through the recipes on each to see what should be OK ( & taste good!). Couldn't believe how much Thai food has bucketfuls of oil, fish sauce or coconut cream. Amazing! I always thought it was quite healthy!

http://www.templeofthai.com/recipes/

On this one, the following recipes sound OK or good:
Tom Yum Gai/Koong
Fish curry
Spicy eggplant salad
Spicy minced chicken salad (Laab Gai)

http://www.mcdang.com/eng/Thaicuisine/Contents.asp

Spicy salmon salad
Thai prawn salad
sweet & sour prawns (could substitute with chicken or fish)
stir fried chicken with ginger
stir fried mixed vegetables with prawns or chicken

For the stir fries use minimal oil, even less than they say, if possible. OK, I'll carry on trying to find more

BTW guys, coconut water is fine. Milk or cream is made by grinding down the flesh & mixing it with the water. Sarge, I don't know how to split a thread to move half of it. Lev? Buksi? Dr Dave? We need you...

Use the Marie Lloyd principle " A little of what you fancy does you good".
There is no good reason to avoid red meat.
Take Simvastatin and Aspirin every day.

I think it's important to identify "good" oil vs bad also. Stay away from lard and re-used cooking oil as many Thai street shops use. I've also heard that palm oil is very bad. Personally, the only thing we use here is sunflower oil which I undertstand is the lowest in fat/cholesterol of them all. Pete

Hi Sarge speedy recover. I have two books which ar essential reading for heart attack, and potentential heart attack patients. They are The South beach Diet and The South Beach Heart Program.
They are written not by a dietician but by a cardiologist, Dr Arthur Agatston MD a promininent preventive american cardiologist.

They out line the diet and life style to follow to avoid / recover from a heart attack. Also he outlines the questions to ask re advanced blood testing etc. to avoid future attacks.

Should you wish to read them Pm me and we can make arrangments to lend them to you.

Yes, Sunflower is much better than some of the others that Thais use (esp palm oil, or coconut oil!) Olive oil is also good if making more Western dishes. Sarge, d'you like pasta? This is a pasta sauce I make for myself - really easy & low fat & good for you: (BTW, much too much for one, so if no-one is joining you, split into individual portions & freeze)

1 tin tomatoes (can't remember the sizes here, but the normal size) - chop using a knife or scissors, roughly
half tin (170g tin) tomato puree
1 large onion (sliced)
4 cloves garlic (chopped)
4 birds eye chillies (or to taste), could use different chillies or even chilli flakes. Chopped (deseed if you don't like it too hot)
herbs like parsley, basil, oregano (optional) - chopped if fresh

Heat a small amount of olive oil & gently fry the onion & garlic until golden. Add chilli & fry for 1 minute. Add tomato paste & any herbs. Stir until mixed. Add the tomatoes & cook until heated. You can cook longer (on a low heat) for a stronger flavour.

Also, I've just remembered something from when I was dieting re oil. Buy a plant sprayer (you know the thing you use to spray a fine mist of water onto plant leaves) Put the oil in there & spray it onto frying pan or wok, instead of pouring, you use far less & it's enough to coat pan & fry food. If you want to really lower the fat you can mix oil & water, but you need to remember to shake the sprayer before spraying.

MANY MANY THANKS TO ALL INPUTTERS VERY HELPFULL AND NOT FALLING ON DEAF LUGOILS I AM PAYING RAPT ATTENTION

I have done a lot of surfing ON the subject and find a lot of it confusing a lot of it contradictory and some which just is not applicable.

I think that is because it is not PATIENT specific

what i have been able to glean in spades is (this is specific to me ) STOP EFFING SMOKING i was doing great up to this morning in fact it seemed so pigging easy i couldnt understand why i had been unable to stop before
OK i now know its going to be hard but i do believe it will be better for me to stop smoking than worry about which oil i fry my chips in (not that that is not important but less so than stopping the weed)
I stumbled on a website ( i wish i could post it but dont know how to) and in it this Doctor was talking about couch potato syndrome where one eats and lies and goes to bed and lies and then eats and lies etc etc (talk about umwah identifying myself in that) and he recommends a short walk maybe ten fifteen minutes after a meal to allow the food to go down. I have done this every meal for 3 days one i find it quite fun to get out and im already up to 25 mins stopping and chatting etc its been great i sleep deeper and better and am definitely more regular
I am eating more thai thom yam guy type lime ingredient foods no more cheese and cutting down on pork fat i am also eating (emphasise ) slightly less as well to loose a few kilos

I am going on prioritys rather than specifics

ie 1. Stop Smoking
2. Limited exercise
3. Watching my diet but not going paranoid

Anything i may be missing????

Sarge,

One thing to remember (cigarettes apart) you will have cravings/needs for certain foods eg you've mentioned the number of egg yolks etc. Don't totally deprive yourself - your cravings will get out of control. Try to moderate on your needs, and if you go over the top on something that is bad (if you believe everything that is written, everything is bad, and you won't ever eat again), try to compensate by doing without something else for a day. If you don't keep your food needs/cravings in check, then you will be fighting a losing battle.

Try to give everything a score eg 3 yolks might equal 2 coconuts. So if you're going to have one bad thing each day, you could opt for one coconut or 1.5 egg yolks. However, only you can work out what is good and what is bad for you before applying your scores.

Good luck.

Thanks BB i just came to the decision that if i dont stop smoking and i was a 4 yes FOUR packets a day man (14 days ago) what i eat isnt going to kill me any quicker than the ciggies hence my prioritys
I liked the stuff i read you sent and have taken it in but if the choice is between a FAG or a bit of pork crackling the pork is gonna win especially if it stops the craving for a fag
I shall be over the moon if after i hand my final boarding pass to the trolly dolly in the sky i can blow a raspberry and say i dont smoke it was a fishbone got me :lach:

Oh and i will be the guy stood behind the spit roasted pig down there in hell cant wait
