Retirement age is 50 now and you need 800,000 baht in a Thai bank account or an income of 65,000 per month or a combination of the two.
If you marry a Thai national you can get yearly extensions to a Non Imm visa as long as you have 400,000/40,000 pmth or combination. You can also apply for a multiple entry Non Imm visa on the basis of visiting your spouse. This is good for a year, but you must exit the country every 90 days. No need to show money, although it might help.
Whether you can get a multi entry Non O from The Thai Embassy or a consulate in Greece without reaching retirement age or being married, depends on them. The criteria vary from country to country. I'm afraid I've heard nothing about Greece. As a general rule of thumb, consulates are far more user friendly than Embassies, so you might get one. Call The Embassy and ask them for details of any consulates in your country and see what they say.
If it's not possible, get a single,double or triple entry Tourist visa depending on the length of your stay. You'll have to do visa runs, but every 90 days (with one 30 day extension to each entry) is better than exiting every 30 days.
What's the euro exchange rate? Assuming 50 Baht, then an income of 35,000 a month is "doable" in HH assuming you're single, but you're not leaving yourself much margin for the good times. Everyone's view on this is different. Some can live on less, others need twice that to satisfy their standard of living.
