This is a start. I'm sure others will add more...

Hin Lek Fai Mountain Park with great viewing platforms for scenic views of the entire area.

Khao Takiab and it's standing Buddha and Wat on the mountain.

The Teak Palace between Hua Hin and Cha-Am.

Wat Huay Mongol west of Hua Hin (largest bronze statue in the world).

Khao Sam Roi Yat National Park south of Hua Hin with it's caves and temple.

The night market and grand night market.

Beaches (Hua Hin, Takiab, and Cha-Am).

Chat Chai day market

Elephant parks/preserves (2)

I've heard there'a a small zoo but I haven't been to it.

Beaches just to the south; next bay suanson at the far (south) end of it Khao Tao - walk up through the Temple complex and there is a path down to a nice little bay - Sai Noi (small sand literally)

Inland west of Huahin towards the hills - Pa la u reservoir and waterfalls.

Keang Krachan national park - if you want nature or Petchaburi for Ancient Temples etc and a town less tourist orientated

Went to see this the last time. Unfortunately I don't have any info about the statue at all, but it was some drive away up on a hill

Magical view from there too...

Edit: Tried to post a couple of links to my photos, but apparently I'm not allowed..
