If you're taking visitors, like your daughters who you've mentioned are coming over soon Richard, it's well worthwhile getting there say half hour before dusk for the great views back into Hua Hin, have a few drinks first if that's a bit early. Once its dark it's not quite the same as the coastline is not that lit up until centre of town.
Another great place, already mentioned, with a stunning garden setting and tables right up to edge of sand, although you're raised up, is Supatra-by-the-Sea. You get perfect close up view of the giant Buddha statue lit up on the side of Takiab mountain. Foods usually great, medium price range like say Coco 51, and they do crispy aromatic duck with plum (hoisin?) sauce, no pancakes for rolling though.
