I know that they sometimes find it difficult to find 'good' staff.

Replace 'sometimes' with 'always' and 'difficult' with 'impossible' and that reflects what almost all farang businesses encounter here. You will very rarely FIND good staff, you have to make them good yourself. With the odd exception all farang managers know in theory how to deal with the Thai staff but the frustration can easily get the better of you from time to time. I do not know the good man and have never been to AIHH that I recall, but respect that he can stay of the Tiger until after 11.15!!

Since I am not living in Thailand and dont have any business here
it is proberly easy for me to be relaxed about work moral etc.
I am only here on a holiday 2 months a year, and dont have the hassle
about practical things. And I always stay in hotels.
But still; this is another culture and I am a guest. I believe that I
will never fully understand Thai life and culture, as well as they wont
understand my standards.
I have had Thai visitors in my Norwegian home some times and they
are still shocked that I am doing everything in my home without
help, washing, cleaning, cooking etc. And that I keep a full job outside
the home.

If Mr. Till, the owner of AIHH, is having a Tiger at 11am it might be that he's been up since 4am. Bakers, especially European ones, rise early.
Anyway, I go there for the brekkie not to have him smile at me though he was pleasant enough the few times I spoke with him.
