Can anyone recommend a store to buy electrical supplies such as cable (twin & earth 2.5mm), decent quality connector blocks, sockets and switches, trunking, breakers etc etc.

I have seen, breakers, sockets, fuse box inclosesures, at home pro, not sure about your 2.5 3 core flex but cheers

You could try a few doors along from All In Hua Hin on the same side towards the market - small shop sells all sorts of cable & connectors.

Also the big general store on Pornpiron Plaza on the Klong (Canal) Road has a wide selection of what you are looking for. Just about one mile north of the Paemai driving range.

Left after the (chaotic) railway crossing going into town 200m the road bends right - 25m shop on the right ( Phillips sign above). He is a wholesale merchant for most electrical supplies.
