Everybody in the industry do. "Le Cordon Bleu" is the world's largest and most renowed hospitality education institution, founded in the 19th century in Paris. Most people think it's a school of culinary arts, but actually its primary education focus is on hospitality management too.

Any chef can tell you, breaded and deep fried steak doesn't work, it will tighten up the tissues in the beef. The only beef suitable for breaded deep frying is the Top Round, but only thinly sliced, and it would have to be marinated for a day or two. Just sprinkle some salt, black pepper and spread some mustard on both sides, wrap it, and put in the fridge. The marinade will soften the tissues. Funny, the recipe on the web site says it's made of "tenderized round steak" which is exactly what I posted previously as suitable for breaded deep frying! Obviously, I don't know anything about the food business, huh?! :wink: :wink: :wink:

Apologies if it seemed I was contradicting you, I meant to back you up only with an alternative recipe :) The steak is good, but it's the milk gravy that really makes it for me. Oddly enough one of the big crazes in the Southern US now is actually for Chicken fried Bacon (American streaky bacon, thick cut) with milk gravy as an appetizer. Tried it once, was absolutely delicious......but I felt my arteries hardening with each swallow.

Don't worry bcrglobal, I was raised on deep fried foods as I am from Tennessee and chicken fried steak is wonderful to someone like me... and my Mom served milk gravy (made with bacon fat) with nearly every meal and we drenched everything with it. I still miss her biscuits 'n gravy.

The deep fryer was the most used appliance in my Mom's kitchen and she kept a large (former) coffee can in the fridge all the time full of bacon fat (or bacon drippin's as they were called then) to season every thing with from vegetables to meat. Bacon drippings make everything taste better! I even ate green (string) beans as long as they were seasoned with bacon drippings.

And I thought the entire cow was made up of round steak growing up because that's all we could afford... I didn't discover sirloin, fillet mignon, or rib eye until I was an adult earning my own money.

I'm still going at 62 and ate those southern fried foods for the first 30 years of my life.... it's all in the genes and how your body handles it.

Been to that restaurant two days ago.. lousy service, disgusting meal !

Now I regret I did not read this thread before visiting their lousy restaurant..

i ve been there once with my family and never again. very ugly food. but for a cheap price like there it can be only ugly. too cheap food too bad quality!!! especially steaks cannot be good for that price. Why all these restaurants serve the thai ketchup?? i big box of heinz is only 5baht more expensive.........

The only steak I ever had was a chicken fried pork steak made by some dodgy cook from Louisiana - I do not recommend

Too bad I didn't get my Mom's recipe for chicken fried round (beef) steak before she passed. I guarantee you would have liked it unless you are a vegetarian.
