Depends on what you want, but we used to live the other side of the highway (20Km or so from Hua Hin). There are some lovely rural areas there, where you can stop at a shop for a drink or something to eat and soak up the atmosphere of a rural Thai village. It's really quite nice...

Kallista, I think you need to look south of HH. Try Kao Tao and PaknamPran.

Or north on Petchkasem Road and the parallel road that follows the canal - countrified but still near to town and on a decent road; all the way to Cha-Am prices drop from those in Hua Hin.

Absolutely right DM, it's the drier air away from the sea... Good times, eh?
Anyroad, now that we know what Kallista is looking for I'd advise doing exactly what DM and Frank have suggested. Drive around and stop at shops - they know everything and anything that's going on in the area. If they have a table outside, all the better. Buy a bottle of whatever takes your fancy and find out if there are any places to rent in the area.
We spent 6 very happy years living in a small village. We found it by doing the above. It's still available to rent (but it wouldn't suit everyone's taste). Being country folk ourselves we're both quite happy with a bit of solitude and being away from the hustle and bustle of Hua Hin.
Good luck in your search K. - with a bit of perseverance and good luck you'll find what you're looking for.

I'd aslo recommend Pak Nam Pran, Khao Kalok, Dolphin Bay areas, beautiful countryside and close to the sea. Tesco Lotus and Makro handy for supplies and loads of nice restaurants.

If you want the feel of living in farm land (mostly pineapple farms) surrounded by hills or small mountains, but would still like the security and style of a western home or development, there are several somewhat isolated developments in the valley west of town. Go out Soi 88 to the end and then explore the north south road that runs between the Palau road and Soi 112. There are a few developments scattered around that area and I'm sure there must be some homes for rent out there.
My brain is like an Internet browser; 12 tabs are open and 5 of them are not responding, there's a GIF playing in an endless loop,... and where is that annoying music coming from?
