How far out do you want to go?
How long for?
Expert guys with own tackle?

Yes the cruise companies (including Mermaid) do trips but fishing is just a small part of the day trip unless of course to strike up a deal for a private charter to take you further out.
Mermaid should be able to answer all your questions so give 'em a bell
