I need a visa extension over Christmas is the immigration open over Christmas.

I'm not 100% sure but the 24th and 25th are not down as national holidays. However.....
Nevertheless, you can do your extension up to 30 days before your permission to stay ends. You also don't lose any time in as much as your 30 days, year or whatever extension will commence from the expiry of your permission to stay not from the date you apply and are granted the extension.

In all the years I've been here, I've never seen any closures for Christmas. The kids will be at school on Christmas day (except Christian schools). Universities will be open. Believe me I was unfortunate and had to teach at the uni on Christmas day one year.

Actually, universities will be closed at Christmas from now on, since they changed the academic year. We're just finishing final exams now. That's good for foreign teachers. Wish they'd done that whilst I was teaching. I'll always remember that day. Had to leave the house at 7:30 and missed my kids opening their presents etc etc. When I got to class, not one student could tell me what day it was. They guessed at my birthday and eventually decided amongst themselves that it was Easter. So you can guess what the subject matter for that lesson was!
