I had a big discussion about this on this side of the pond a year or so back. I asked them what kind of liver is generally used, answer is pigs liver. I asked about calves liver which is what my Mom used long ago when I was a kid. Got long and hard laughs here as they said if you can find it, it would cost you a fortune. Probably true as I don't think Thailand is into veal, therefore little or no slaughter of young cows.

Perhaps JD has some advice on this? Pete

OK, explain what steak and kidney pie is? Never had it, only heard it mentioned. And the surprise question: what animal's kidney's are involved? Pete

No, No, No...LOL. We're talking about Thailand here. It could be made with some of those Tokays we were talking about. :D Pete

PS: I've been eating some of the best cheese steak sandwiches this side of the Pacific over here, only to find out they are made with ostrich meat. One is never sure, and really tasted like good, tender beef.

Liver n bacon - mmmm had it last time I was in UK - loads of mash and dark cabbage - better than sex !

I can honestly say I have sex more frequently than liver and onions...

I can't say whether I enjoy it more, as I haven't had it for 6 years, so I can't remember...

And God only knows when I last had liver and onions.
This is the way

Re the various merits of liver. Ox liver for steak and kidney pie (pudding is better), pigs liver for liver and onions and calves liver with a touch of sage as a separate dish.
