I had a big discussion about this on this side of the pond a year or so back. I asked them what kind of liver is generally used, answer is pigs liver. I asked about calves liver which is what my Mom used long ago when I was a kid. Got long and hard laughs here as they said if you can find it, it would cost you a fortune. Probably true as I don't think Thailand is into veal, therefore little or no slaughter of young cows.
Perhaps JD has some advice on this? Pete

I've eaten pigs liver and heart at sukiyaki and it was ok. NOT though the same as ox liver and so on to kidneys now !!!!!!!!!!!!!!!!!

OK, explain what steak and kidney pie is?
I'd say its self explanatory.
No, No, No...LOL. We're talking about Thailand here. It could be made with some of those Tokays we were talking about. Pete
PS: I've been eating some of the best cheese steak sandwiches this side of the Pacific over here, only to find out they are made with ostrich meat. One is never sure, and really tasted like good, tender beef.

I find the offal available in chatchai to be generally very good.
Beef I find rather like old leather from there.
Liver n bacon - mmmm had it last time I was in UK - loads of mash and dark cabbage - better than sex !
with the amount of piggies in thailand i wouldnt thinking sourcing liver is gonna be a problem.
now bacon is a different matter - u can get that awful streaky stuff just about anywhere but findin decent back bacon aint so easy - my suggestion?
make it yrself get a pork loin from the market make yrself a brine solution stick it in with the pig and turn every day a few weeks later u will have lovely cured bacon

I can honestly say I have sex more frequently than liver and onions...
I can't say whether I enjoy it more, as I haven't had it for 6 years, so I can't remember...
And God only knows when I last had liver and onions.
Re the various merits of liver. Ox liver for steak and kidney pie (pudding is better), pigs liver for liver and onions and calves liver with a touch of sage as a separate dish.
thinly sliced and cooked (fry) in butter - yum yum also "devilled" kidneys same way. Who cares about the cholestorol!!!!
and while we are on "offal" how about sheeps brains and tripe????? Sure beats spiders and grasshoppers ha, ha.
