I know a good comment will be that regardless of the name of the sausage, the quality and taste depends upon the butcher who makes it. I think in Hua Hin, Hua Hin Ham & Bacon has a good reputation for quality sausage.
The place near me has names such as Lincolnshire, Cumberland, Yorkshire and something called Epicure breakfast sausage...among many others. Also sausage mixed with things like leeks, jalapeno etc.
I fancy the Yorkshire the best and I'll probably come to find that I like it so much because it has a huge fat content?!
