I am planning to have a 6000 lite underground storage tank for water as there is no town water and have tried several times for bore hole water without success.

My home is for holiday purposes only and can only come 3 times a year. Will the water go stale, or become unusable when left for 3 months at a time.

Any advice would help

It mostly depends on the quality of the water that you are going to store, in addtion to the type of storage container / tank. An underground tank is ideal as it will be at a relatively stable low temperature, and, providing it is covered, not open to sunlight. Water supplied here by truck from the government source should be no problem. As you have stated that you cannot get underground supply, I assume that is how you will fill it. Just ensure that the tank and contents canot get contaminated by flooding, and / or animal or vegetable matter, and you should not have a problem.
As you are going to have it built, and will therefore require a pump to use it, try to have them pipe it up so that you can circulate the water around through a filter, and back to the tank, as an additional option. :cheers:
