The multi-entry Non O is certainly a good visa to get at the start. It will be valid for a year. You need to exit Thailand every 90 days. If you go out just before the visa expires, you'll get another 90 days therefore making the visa work for approximately 15 months.
Once you're here on that Non Imm visa, you can extend it for a year if you're over 50 and have either 800,000 Baht in a Thai bank account (must be in there for 3 months before applying) or an overseas income of 65,000 Baht a month (certified by your Embassy) or a combination of the two as long as the total amount works out over 800,000 Baht. Applications can be made in HH and should be submitted 2-3 weeks before any 90 day entry stamp is due to expire.
I don't know much about the consulates in the States, but I'd choose one carefully. I have read that some are user friendly and give the multi-entry Non Os, whilst others are not and will only issue single-entry. Hopefully, some of our American members will be able to advise you more. The cost of a multi-entry should be 5,500 Baht.
Good luck.

Thinking about it a bit more, could you be eligible for a Non Immigrant OA visa? There's more paperwork to get through back home (police and medical reports) and you have to demonstrate savings and/or income in your home country, but you'll be stamped in for a year when you arrive. You only have to report to Immigration every 90 days thereafter, not leave the country for a visa run. If you go down that route, get a multiple-entry OA. It'll work for you for two years as long as you exit Thailand just before the original visa expires.
huahindolly has one and will probably be better able to advise you of application process. In the meantime, take a look at this link:
