A good steak dinner

I rarely order steak when we go out. The steak we buy here in the states can be very good.
I take the steak out of the refrigerator one hour before cooking, cover with garlic and pepper, rub some oil in. When room temp, it's ready to salt and cook.
I crank up the grill, or stove top, until the pan is smoking hot.
Toss the steak on and sear for a few minutes (maybe one for you Richard
) and turn and sear again.
Searing at a hot temp keeps the juices in.
Take off heat and let sit for 5 minutes to allow juices to redistribute.
